-Preheat oven to 400 degrees.
-Peel 1 bunch of carrots and cut into half inch thick discs.
-Toss carrots with the following:
2 TBS olive oil
½ tsp sea salt
¼ tsp black pepper
-Spread out in a large 4-sided sheet pan.
-Roast 20 minutes.
-Reduce oven to 325°F and roast, stirring occasionally, until carrots are browned and tender, about 25 minutes more.
