Golden Beet Salad

-Peel then grate 1 bunch of golden beets.

-Add a handful of chopped fresh basil, dill or parsley to the bowl.

-Mix in 4 TBS olive oil, 2-3 TBS rice vinegar and some toasted sesame seeds.

-Add sea salt and pepper to taste.

-Serve at room temperature or chilled.
