Artichokes with Garlic Aioli

-Trim 2 artichokes, leaving 1.5 inches of stem.

-Then carefully peel the stem.

-Pack them upright in a large pot.

-Break a head of garlic up into cloves.

-Pour in 1 cup of water.

-Bring to a boil.

-Reduce heat. Simmer, covered, for 35 minutes.

-Transfer to a plate; let cool.

-Peel and mash 4 of the steamed garlic cloves.

-Stir in the following:

1 cup mayonnaise

1 TBS finely grated lemon zest

2 TBS fresh lemon juice

¼ tsp white pepper

A pinch of sugar

A pinch of sea salt

-Refrigerate artichokes and aioli separately until ready to serve.
