Roma Beans with Mint and Feta Cheese

-Boil 4 quarts water and tip and tail 1 pound Roma beans.

-Blanch the beans for just 2 minutes, then drain.

-Cool them a little then pat dry and chop into bite-sized pieces.

-Mix with 1 cup crumbled feta cheese and ½ cup chopped walnuts.

-Make the salad dressing:

½ cup olive oil

¼ cup white wine vinegar

½ cup minced mint leaves

1 clove of garlic put through a press

¼ tsp sea salt and some freshly ground black pepper

-Pour over salad and toss well.
