Turnip Salad with Pistachios and Sheep Milk Feta

-In a medium salad bowl, combine the following:

1 bunch turnips, washed and sliced into ¼-inch thick rounds

Half a bunch of chives, finely chopped

¼ cup shelled pistachios

-Mix well.

-Add the following:

The zest and juice of 1 lemon

3 TBS extra virgin olive oil

A big pinch of sea salt and some freshly ground black pepper

-Toss gently to combine.

-Sprinkle with ¼ cup crumbled sheep feta and some more salt and pepper. 

-Serve fresh, feeds about 4 people.
