Carrot Radish Salad

-Combine 1 bunch of grated radishes with ½ tsp salt, tossing well to coat.

-Let stand at room temperature 30 minutes.

-Rinse, drain and pat dry.

-Grate 4 carrots

-Combine radish and carrots.

-Mix together the following:

1 TBS rice vinegar

1 tsp sugar

1 tsp mirin (sweet rice wine) or saki

-Stir until sugar dissolves.

-Drizzle over radish and carrot mixture; toss to combine.

-Cover and chill.
