Broccoli with Cumin-Lime Dressing

From Jack Bishop’s Vegetables Every Day.

-Chop 1 head of broccoli into florets.

-Peel the stems and chop into small pieces.

-Steam over high heat for 6-7 minutes until just tender.

-In a large bowl whisk together the following:

1 tsp lime zest

1 TBS lime juice

1/2 tsp ground cumin

Tabasco to taste

Celtic sea salt

-Stir in 1/2 cup finely minced sweet onion and the broccoli.

-Toss to coat and serve.
